When Gary first approached me with the idea of a Lemon and Honey dessert, I was immediately intrigued. The challenge was clear: create something that is not only visually impressive but also a harmonious blend of flavours. We aimed for a dessert that would be a perfect balance of the five tastes – bitter, sour, salty, sweet, and umami – using the finest natural ingredients.
